McDonald’s and two other fast-food chains have stopped using an ammonia-treated burger ingredient that meat industry critics deride as “pink slime.”
The product remains widely used as low-fat beef filling in burger meat, including in school meals. But some consumer advocates worry that attacks on the product by food activist Jamie Oliver and others will discourage food manufacturers from developing new methods of keeping deadly pathogens out of their products.
The beef is processed by Beef Products Inc. of Dakota Dunes at plants at Waterloo, Iowa, and in three other states. One of the company’s chief innovations is to cleanse the beef of E. coli bacteria and other dangerous microbes by treating it with ammonium hydroxide, one of many chemicals used at various stages in the meat industry to kill pathogens.
“Basically, we’re taking a product that would be sold at the cheapest form for dogs, and after this process we can give it to humans,” Oliver said in a segment of his ABC television show, Jamie Oliver’s Food Revolution, that aired last spring.
BPI, which once boasted of having its product in 70 percent of the hamburger sold in the country, has lost 25 percent of its business. McDonald’s has been joined by Taco Bell and Burger King in discontinuing use of the product, and the company is worried other chains and retailers will follow them.
“It’s just a shame that an activist with an agenda can really degrade the safety of our food supply,” said David Theno, an industry consultant who has advised BPI and is credited with turning the Jack in the Box burger chain into a model of food safety after a deadly E. coli outbreak in 1993. He called the BPI process “extraordinarily effective” in making beef safer.

Eating 5 Burgers a Week Increases Cancer Risk

Unless there is something really different between the digestive systems of Yanks and Brits, hamburger lovers on both sides of the Atlantic are about to be told to hold down the number of beef patties they gobble down.
It has more to do with reducing your chances of getting cancer than it does with making your love handles smaller.
Under new British Department of Health guidelines that are about to be issued, the Scientific Committee on Nutrition has cautioned grown-ups not to eat more than 17.5 ounces of red meat each week. That’s a bit more than four Quarter Pounders. They warn that consumers who eat red meat in excess are at risk of developing cancer later in their lives.
AOL News checked with several government and academic diet and nutrition websites, and most reported that the average American and Canadian ate 100 to 150 hamburgers a year, which is pretty much in line with what the English are about to report. And, of course, that doesn’t include steaks, roast beef and all the other sorts of red meat and pork.
The report is going to recommend that those who eat more than 5 ounces of meat a day should cut back to about 3 ounces daily, and that includes breakfast meats.
Next week’s release is a follow-up to a draft report released 18 months ago. That research concluded that cutting the consumption of red and processed meat — and they included pork, beef, lamb and goat — could reduce the risk of colorectal cancer. Last year, England’s top medical officer told reporters that a 30 percent reduction in eating meat could save more than 18,500 lives a year, according to the BBC.
The Scientific Committee on Nutrition, a group of independent government advisers, was asked by the British health department to review and add its own recommendations to the 2009 draft.
Next week’s report will also address limits on ham, bacon, sausage and other processed meats.
What may drive devoted dieters over the edge is that earlier this month there was a lot of media attention on a meat study conducted by the British Nutrition Foundation. It reported that most adults ate “healthy amounts” of red meat and that a link to cancer was “inconclusive” at best.
The swirl of conflicting meat studies has been going on for years, with several linking eating too much meat with not only cancer but also a number of other diseases, including heart disease and diabetes. However, other research has warned that not eating enough meat can cause iron deficiency, especially in women.

6 Foods That Weaken Bones

What you eat plays a big role in whether you’re getting the nutrients you need to build strong bones. What might surprise you, though, is that your diet can also play a role in sapping bone strength. Some foods actually leach the minerals right out of the bone, or they block the bone’s ability to regrow. Here, the six biggest bone-sappers:
1. Salt
Salt saps calcium from the bones, weakening them over time. For every 2,300 milligrams of sodium you take in, you lose about 40 milligrams of calcium, dietitians say. One study compared postmenopausal women who ate a high-salt diet with those who didn’t, and the ones who ate a lot of salt lost more bone minerals. Our American diet is unusually salt-heavy; most of us ingest double the 2,300 milligrams of salt we should get in a day, according to the 2005 federal dietary guidelines.
What to do: The quickest, most efficient way to cut salt intake is to avoid processed foods. Research shows that most Americans get 75 percent of their sodium not from table salt but from processed food. Key foods to avoid include processed and deli meats, frozen meals, canned soup, pizza, fast food such as burgers and fries, and canned vegetables.
2. Soft drinks
Soft drinks pose a double-whammy danger to bones. The fizziness in carbonated drinks often comes from phosphoric acid, which ups the rate at which calcium is excreted in the urine. Meanwhile, of course, soft drinks fill you up and satisfy your thirst without providing any of the nutrients you might get from milk or juice.
What to do: When you’re tempted to reach for a cola, instead try milk, calcium- and vitamin D-fortified orange juice, or a fruit smoothie made with yogurt. Or just drink water when you’re thirsty, and eat a diet high in bone-building nutrients.
3. Caffeine
The numbers for caffeine aren’t as bad as for salt, but caffeine’s action is similar, leaching calcium from bones. For every 100 milligrams of caffeine (the amount in a small to medium-sized cup of coffee), you lose 6 milligrams of calcium. That’s not a lot, but it can become a problem if you tend to substitute caffeine- containing drinks like iced tea and coffee for beverages that are healthy for bones, like milk and fortified juice.
What to do: Limit yourself to one or two cups of coffee in the morning, then switch to other drinks that don’t have caffeine’s bone-sapping action. Adding milk to your coffee helps to offset the problem, of course.
4. Vitamin A
In the case of vitamin A, recent research is proving that you really can get too much of a good thing. Found in eggs, full-fat dairy, liver, and vitamin-fortified foods, vitamin A is important for vision and the immune system. But the American diet is naturally high in vitamin A, and most multivitamins also contain vitamin A. So it’s possible to get much more than the recommended allotment of 5,000 IUs (international units) a day — which many experts think is too high anyway.
Postmenopausal women, in particular, seem to be susceptible to vitamin A overload. Studies show that women whose intake was higher than 5,000 IUs had more than double the fracture rate of women whose intake was less than 1,600 IUs a day.
What to do: Switch to low-fat or nonfat dairy products only, and eat egg whites rather than whole eggs (all the vitamin A is in the yolk). Also check your multivitamin, and if it’s high in vitamin A, switch to one that isn’t.
5. Alcohol
Think of alcohol as a calcium-blocker; it prevents the bone-building minerals you eat from being absorbed. And heavy drinking disrupts the bone remodeling process by preventing osteoblasts, the bone-building cells, from doing their job. So not only do bones become weaker, but when you do suffer a fracture, alcohol can interfere with healing.
What to do: Limit your drinking to one drink a day, whether that’s wine, beer, or hard alcohol.
6. Hydrogenated oils
Recent studies have found that the process of hydrogenation, which turns liquid vegetable oil into the solid oils used in commercial baking, destroys the vitamin K naturally found in the oils. Vitamin K is essential for strong bones, and vegetable oils such as canola and olive oil are the second-best dietary source of this key nutrient, after green leafy vegetables. However, the amounts of vitamin K we’re talking about are tiny here — one tablespoon of canola oil has 20 micrograms of K, and one tablespoon of olive oil has 6 micrograms, as compared with 120 micrograms in a serving of spinach.
What to do: If you’re eating your greens, you don’t need to worry about this too much. If you’re a big lover of baked goods like muffins and cookies, bake at home using canola oil when possible, and read labels to avoid hydrogenated oils.

Burgers May Feed Kids’ Asthma Risk

Children who eat three or more hamburgers a week may raise their odds for asthma and wheeze, a new study suggests.
However, eating the so-called “Mediterranean diet” — rich in fruits, vegetables and fish — could cut kids’ respiratory risk, the researchers say.
“Our results support previous reports that the adherence to a Mediterranean diet, which is characterized by a high intake of fruit, vegetables and fish and a low intake of meat, burger and fizzy drinks, may provide partial protection against asthma in childhood,” said lead researcher Dr. Gabriele Nagel, from the Institute of Epidemiology at Ulm University in Germany.
The report is published in the June 3 issue of Thorax.
For the study, Nagel’s team collected data on about 50,000 children from 20 rich and poor countries. Parents were asked about their children’s typical diet and whether they had asthma or not. In addition, almost 30,000 of the children were tested for allergies.
While diet did not appear to influence allergies, it was associated with the risk of asthma and wheeze, the researchers found.
Children in both rich and poorer countries who ate a lot of fruit had lower rates of wheeze.
Eating lots of fish seemed to protect children in rich countries, and a diet high in cooked green vegetables protected children in less developed countries from wheeze, Nagel’s group found.
Fruits and vegetables are rich in antioxidant vitamins and biologically active agents, and the omega 3 fatty acids prevalent in fish have anti-inflammatory properties, which might explain these findings, the researchers said.
“Overall, a Mediterranean diet was associated with a lower lifetime prevalence of asthma and wheeze,” Nagel said.
On the other hand, children who ate a lot of burgers had a higher lifetime prevalence of asthma and wheeze, the researchers found. The finding was especially true for allergy-free children from more affluent countries.
But the burger finding could be a marker for other lifestyle factors that could boost a child’s for asthma, the researchers note. Meat in general was not seen to increase the risk of wheeze, the study found.
Pulmonologist Dr. Michael Light, a professor of medicine at the University of Miami Miller School of Medicine, agreed that diet can influence asthma.
“The data is fairly consistent that antioxidants and unsaturated fatty acids play a role in the big picture,” Light said. “This doesn’t mean if you change your diet today you are going to cure your asthma. All the study is saying is that one of the explanations for asthma is probably related to diet,” he said.
Echoing these findings, results of a study presented May 16 at the American Thoracic Society International Conference in New Orleans showed that fatty meals were linked to impaired lung function.
In that study, Australian researchers tested people with asthma before and after a high-fat meal or after a low-fat meal. They found that the high-fat meal increased inflammation and reduced lung function.
“If these results can be confirmed by further research, this suggests that strategies aimed at reducing dietary fat intake may be useful in managing asthma,” the study’s lead author, Lisa Wood, a lecturer in biomedical sciences and pharmacy at the Hunter Medical Research Institute in New Lambton, said at the time.

USDA Admits Meat Supply Is Routinely Contaminated

Next time you’re at an eatery whose sourcing practices you don’t trust, avoid the veal. Skip the burger, too. Those are the immediate takeaways from this stomach-turning report (PDF) from the USDA’s Office of the Inspector General. The long-term takeaways are more profound–and disturbing.
The report focuses on the USDA’s system for keeping hazardous chemical residues–”veterinary drugs, pesticides, and heavy metals”– out of the meat supply. You know, meat–the stuff that Americans eat more than a half a pound of per day, on average.
How is the agency doing at this critical task? From reading the report, I’d describe its system as sieve-like–but that would be unfair to sieves. After all, those kitchen implements do at least catch most of the solid bits suspended in a liquid. The USDA routinely lets chemical residues flow right into the nation’s meat supply–without catching a damned thing.
The problem is not trivial, as the report makes clear:
Residues of drugs, pesticides, and heavy metals differ from microbiological pathogens like E. coli, Salmonella, and Listeria Monocytogenes, which the public more readily associates with food safety. While cooking meat properly can destroy these pathogens before they are consumed, no amount of cooking will destroy residues.
In fact … “In some cases, heat may actually break residues down into components that are more harmful to consumers.” [Emphasis mine.]
Evidently, the problem is worst of all for meat from animals raised on dairy farms. Such cows find their way into the beef supply in two ways. “Spent” dairy cows–ie, ones that are too sick or old to lactate–get slaughtered for beef. Their meat is so tough that it’s mainly used as hamburger. As for veal, much of the U.S. veal market is supplied by the male offspring of dairy cows. Such animals are known as “bob veal.”
According to the report, “Plants handling [spent] dairy cows and bob veal were, in 2008, responsible for over 90 percent of residue violations found.”
Now, the USDA’s meat safety arm, the FSIS, knows full well that beef-processing plants that deal with dairy cows tend have the great bulk of residue trouble. But get this, from the report:
FSIS allowed such plants to continue treating residue problems as “not reasonably likely to occur”–the determination that would allow plants to justify not implementing additional procedures to control residues.
One such plant had 211 violations in 2008, the report states–and still was able to operate as though such violations were “not reasonably likely to occur.”
Okay, so why is meat from dairy cows so likely to be tainted with residue? The report puts it bluntly:
Some producers provide antibiotics to dairy cows in order to eliminate an infection after a calf is born. If the producer perceives that the cow is not improving, he may sell the animal to a slaughter facility so that he can recoup some of his investment in the animal before it dies. If the producer does not wait long enough for the antibiotic to clear the animal’s system, some of this residue will be retained in the meat that is sold to consumers.
So let’s get this straight: sick cows pumped full of antibiotics are routinely being slaughtered for burger meat.
As for veal …
