“Now this is what is wrong with the food people are eating in America. A bacon sundae – are you kidding?!” –KTRN

Is Burger King’s new bacon sundae a delightful concept, or the most recent example of all that’s wrong about American food?

That’s pretty much the divide in opinion here at Salt Central, as well as in online forums and social media, where the bacon sundae is inspiring fierce debate. “Really? I know sales are low and all but REALLY?” questioned one Twitter skeptic. “Americans eat death, pay for the privilege,” added another. Countered by an enthusiast who typed: “IT’S ABOUT TIME!”

That’s a lot of passion for a $2.49 menu item available only at a handful of Burger Kings in Nashville, Tenn. “The company is currently testing menu items in a small sampling of U.S. restaurants,” spokesperson Randi Farynyk told The Salt. “The brand does not have plans to expand the test to additional markets at this time.”

Drat. Count me among the staffers here who said “Yeah!” when the sweet-salty-savory news broke. Since NPR wasn’t popping for a road trip, I had to turn to Sam Bradley, a 27-year-old Nashville resident I found on Twitter, for confirmation. She had already trundled over to her local Burger King to check it out.

McDonalds’ McRib and its cult-like following are back. Thank goodness the “disconcerting” sandwich is only returning for a limited time only, says Meredith Melnick at TIME. Because if you knew about all the unpronounceable ingredients packed into the McRib, you might think twice about wolfing down the sauce-drenched pork concoction. Think you can stomach what’s inside? Read on:

How many ingredients are there?
At face value, the sandwich contains just pork, onions, and pickle slices slathered in barbecue sauce and laid out on a bun. But the truth is, there are roughly 70 ingredients. The bun alone contains 34, says TIME’s Melnick. In addition to chemicals like ammonium sulfate and polysorbate 80, the most egregious may be azodicarbonamide – “a flour-bleaching agent most commonly used in the manufactur[ing] of foamed plastics like gym mats the and soles of shoes.” According to McDonald’s own ingredient list, the bun also includes calcium sulfate and ethoxylated mono- and diglycerides, among other chemicals.

From Nebraska Lab To McDonald’s Tray: The McRib’s Strange Journey

Since McDonald’s announced the seasonal revival of its popular McRib sandwich last month, there’s been a round of reports about what’s in the sandwich that have ranged from glib (on its 70 ingredients) to McFib (on the alleged inhumane treatment of the pigs that go into it).

But even though there’s not a rib to be found inside the sandwich, that pork patty drenched in barbecue sauce actually represents one of the greater innovations in meat science of the last century.

Roger Mandigo is an emeritus University of Nebraska animal science professor credited with the technology that made the McRib possible. And here’s its story, straight from the meat scientist’s mouth.

Back in the 1970s, Mandigo tells The Salt, he was approached by the National Pork Producers Council (the folks who later brought you “the other white meat”) to create a product with pork trimmings that could be sold to the fast food giant.

“The pork producers wanted to see more pork on the menu, and they were targeting McDonald’s,” Mandigo said.

Mandigo went to work in the lab and came up with a new take on an old-fashioned technology: sausage-making. Instead of just stuffing pork meat inside a casing, Mandigo used salt to extract proteins from the muscle. Those proteins become an emulsifier “to hold all the little pieces of meat together,” he says.

“All we did was reuse the technology that had been around for hundreds of years and emphasize that we could shape products to shapes people wanted,” he says.

Saturated Fat’s Dirty Secrets Revealed

Doctors nearly unanimously agree that eating foods loaded with saturated fats — such as butter, cream and pork in all its wondrous manifestations — can cause heart disease, obesity and diabetes. Conversely, foods with unsaturated fats, such as olives and salmon, can have the opposite effect.

Yet no one has known why, until perhaps now. As reported in the Sept. 30 issue of the journal Cell, researchers from University of California, San Diego (UCSD), found that saturated fat literally clogs cell membranes at the molecular level, causing abnormal cell signaling that ultimately throws basic metabolism out of whack. If the researchers are right — that is, if their work on mice proves true in humans — then they envision a new class of dietary supplements or pharmaceutical drugs to reverse the effects of a high-fat diet.

Knowledge congealed

Saturated fats tend to be solid at room temperature. They contain fatty acids that are saturated, chemically speaking, with hydrogen atoms; the carbon atoms are bonded to as many hydrogen atoms as possible. Unsaturated fats contain fatty acids with a lower ratio of carbon to hydrogen.

For over a decade researchers have known that saturated fats somehow activate enzymes associated with developing insulin resistance (a precursor to diabetes) and atherosclerosis, or clogged arteries. Unsaturated fats can block these enzymes within our cells. The enzymes, called Jun kinases, work at a subcellular level.

Building on this knowledge, a UCSD team led by Michael Karin speculated that something in cell membranes must be able to differentiate between saturated and unsaturated fats, activating or deactivating Jun kinases. In their new study, the team ultimately identified yet another enzyme, called c-Src, which resides within a cell membrane.

So, saturated fats apparently smother and push c-Src deeper into the cell membrane, to regions that are more rigid. The c-Src accumulates here and turns into an activated form that then triggers Jun kinases to start working — setting into motion the chemical reactions behind insulin resistance and circulatory disease.

Unsaturated fats, in contrast, block c-Src aggregation and thus prevent the whole cascade of troubling chemical signaling.

One pill makes you smaller

For scientists, the findings provide a new model for how cell membrane composition can trigger different signaling cascades. For non-scientists, the findings might mean that you can have your saturated fat and eat it, too.

Consider how polyunsaturated fatty acids such as EPA (also called eicosapentaenoic acid) and omega-3s are available in a pill form, more or less in their natural state. These aren’t miracle cures, but they do help some people lower their blood cholesterol (or, blood fat) levels. With a better understanding of why unsaturated fats can have protective effects, doctors might be able to identify more potent EPA-like molecules, Karin said. These molecules, delivered in a pill, could reverse the negative cycle put into effect by diabetes and other chronic disease.

If popping a pill irks you, or if you can’t wait a decade for a pill to hit the market, you can always switch to a diet that strives to reduce saturated fats. This means eating less meat and more vegetables and whole grains.
While some doctors recommend eating so-called lean cuts of meat, the very existence of lean meat necessitates the existence of fatty meat, which someone else, someone likely poorer than you, will eat. And that’s no way to feed a planet.

Chipotle Admits Major Menu Mistake

Chipotle has always advised on its website that vegetarian and vegan customers should avoid its pinto beans. The beans are cooked with “a small amount of bacon,” unlike the Mexican chain’s black beans, which are vegan. But in-store menus do not indicate the porkiness of the pinto, and Chipotle’s burrito assemblers are instructed to inform customers of the bacon inclusion only if they order a burrito without other meat.

This policy meant that at least one regular Chipotle eater, Maxim senior editor Seth Porges, unwittingly ate lots of bacon over the past several years. Porges does not eat pork, as he said in a letter to Chipotle, “for religious and cultural reasons,” and so was shocked to discover, after years of eating Chipotle’s pinto beans, that it contained bacon. Consumerist reports that Porges tweeted about the shocking discovery, and also emailed Chipotle CEO Steve Ells, to complain. Ells responded immediately. He told Porges that the chain would change its menu to include a mention of the bacon in its pinto beans.

The timeframe for the menu change is unclear, but perhaps Chipotle will add the bacon notice when it starts offering brown rice and breakfast burritos nationwide — or maybe as it rolls out its vegan-friendly garden blend option or its delicious new chorizo filling. Ells should also be thankful that Porges isn’t a Hindu in need of costly spiritual cleansing after his irreligious consumption.
